Coconut Flour Waffles

This recipe makes approximately 8 waffles. They are high in fiber, high in protein and very filling. These are grain free, SCD, FODMAP, PALEO and SIBO friendly. I will often make these as pancakes on Sundays and put them in a toaster like an Eggo waffle during the work week for breakfast.

4 tbls melted butter, ghee or coconut oil
6 eggs
2-4 tbls pureed apple, pumpkin, banana, pear or other
2 tbls honey
1/4 tsp salt
1/4 cup coconut flour

Mix all together and place in well oiled waffle iron. Taste great as left overs.

Each 1/4 section of a Belgian waffle has 3g carbohydrates with 2g of the carbs are fiber, and approximately 6g of protein.
